Tziscao, Chiapas, Mexico.
Tziscao, Chiapas.
The State of Chiapas produces 35 % of the Mexican coffee. Many small coffee farmers get organized into cooperatives to promote the product of their land. It is the case of the family Morales, in the village of Tziscao. In the mid-elevation forests and lakes of the National park Lagunas de Montebello, these natives cultivate a biological coffee, without any chemical. Harvesting, washing, drying, roasting, grinding, every stage of manufacture of this gold green (color of the grains before roasting) is made the traditional way. Sold through fair trade coffee, it will join the national and international market. A community project that makes us think about a product that we consume daily.
